Homemade granola truly hits different. Not only is it surprisingly simple to put together, but your kitchen smells divine and there’s just something so special about a freshly made batch. This granola in particular is so lush because of the addition of creamy peanut butter. This granola compliments all the usual offenders. Açai bowls, yoghurt and fruit, and even porridge. Tick, tick, tick. So good you’ll want to eat it by the spoonful. That’s okay too.

INGREDIENTS
1 cup rolled oats (use wheat-free if you need)
1 1/2 cups chopped mixed nuts (whatever you have in the pantry will work well)
1/2 cup mixed seeds
1/2 cup shredded coconut
1/2 teaspoon sea salt
1/4 teaspoon cinnamon
1/2 cup natural peanut butter
2 tablespoons extra virgin coconut oil
2 tablespoons maple syrup
METHOD
Preheat the oven to 180° C and line a baking tray with baking paper. Add all of the dry ingredients to a large mixing bowl and mix well.

Melt the peanut butter, coconut oil and maple syrup in a small saucepan over low-medium heat. Gently stir until thoroughly melted and well combined. Pour the mix into the dry ingredients and stir well to combine.

Pour the granola out onto the lined baking tray and spread evenly. Bake for 15 minutes, then remove from the oven and use a spoon or spatula to stir on the tray to ensure it all cooks evenly. Turn the temperature down to 120° C and return to the oven for another 15 minutes.
Take the granola out of the oven and allow it to cool completely. Store in a glass jar or an airtight container in the fridge. Enjoy!
