This isn’t your typical coleslaw. Think: Herby green dressing, nutty almonds, and bursts of sweet cherry tomatoes. This coleslaw is the perfect addition to burgers, baked potatoes and summer spreads. Take her to picnics and Christmas day. She’s bright, she’s refreshing, and she’s packed with nourishing ingredients. Did I mention this creamy green coleslaw comes together in only 10 minutes?

INGREDIENTS

Salad

  • 1/2 green cabbage, inner stem removed and sliced thinly

  • 1 large carrot (or 2 small), grated

  • 1 cup cherry tomatoes, quartered

  • 1/2 cup almonds, slivered or sliced in halves

  • Sesame seeds, to garnish

Dressing

  • 1 cup raw cashews

  • 1 cup water

  • 1 bunch basil, rinsed and roughly chopped

  • 1 bunch dill, rinsed and roughly chopped

  • Juice of 1 lemon

  • 1 tablespoon extra-virgin olive oil

  • Salt and pepper, to season

METHOD

  1. Soak the cashews in boiling water for 10 mins. In the meantime, place the cabbage into a large mixing bowl and massage for a few minutes, until it softens and decreases in size slightly.

    1 cup raw cashews

    1/2 green cabbage, inner stem removed and sliced thinly

  2. Add the carrot, cherry tomatoes and almonds to the cabbage. Use tongs to mix through.

    1 large carrot (or 2 small), grated

    1 cup cherry tomatoes, quartered

    1/2 cup almonds, slivered or sliced in halves

  3. Drain the cashews and add all of the dressing ingredients to a high-speed blender like a Nutribullet. Process until smooth. Taste and season with salt and pepper as needed.

    1 cup water

    1 bunch basil, rinsed and roughly chopped

    1 bunch dill, rinsed and roughly chopped

    Juice of 1 lemon

    1 tablespoon extra-virgin olive oil

    Salt and pepper, to season

  4. Pour over the salad ingredients and use tongs to mix through. Transfer to a serving bowl and garnish with sesame seeds. Store in the fridge until ready to serve. Enjoy!
